1 Whole Fryer Chicken (4-6 lbs.)
3 tbsp Medeiros Vegetable Oil
¼ cup Marcum Gourmet Seasoning Rub (such as Beer Can Chicken Smokey Mesquite)

Preheat oven to 350 °

Pat chicken dry with paper towels.

Rub oil all over chicken.

Season chicken with rub; distribute seasoning evenly over chicken, including under skin and in cavity.

Roast chicken for 1 ½ to 2 hours (time will vary depending on size of chicken). Baste chicken occasionally with pan juice. Roast until thigh is 170 °F and breast is 165 °F.

Allow chicken to rest for 10 minutes before carving.
