Heat up a large skillet over medium heat. Add 2 tsp of oil to the pan, and allow to heat up. Add the ground turkey.
Cook the turkey until brown and no longer pink.
Add the beans, salsa, taco seasoning, and about a 1/2 cup of liquid (water, stock or jalapeno juice) to the skillet
Bring to a simmer, while stirring constantly. Cover and simmer for 10-15 minutes.
If mixture is looking dry add in 1/4 cup chicken stock, water, or jalapeno juice. Season with salt and pepper after cooking.
Heat tortillas in micorwave or in a skillet on medium heat, add 1 Tbsp of oil when pan the is hot.
Add cheese to the warm tortillas and assemble burrito.
Serve with remaining salsa.
